Homemade / home assembled Tried cooking something I’ve not eaten before -skate wing

Post image
213 Upvotes

I was supposed to do this on Saturday but time got away from me (at the pub) so had to do this quickly today after work.

I’ve never eaten skate before so wasn’t really too sure what I was doing but it came out ok in the end. I’d have liked to get a bit more colour on the outside but was struggling with the fish sticking and a smoke alarm going off which scared my dogs.

Dish is a pan fried skate wing, some potatoes, purple broccoli, sauce suprême and a homemade basil oil.

Not my best work but not a bad first attempt.

Question Mutti is now the UK’s biggest supplier of tinned tomatoes.

Post image

Does anyone actually know how a 127-year-old family firm manages to persuade British shoppers to pay £1.60 for a store-cupboard staple?

What’s your favourite brand of tinned tomatoes, and what makes it stand out from the rest?

Used a whole chicken to create a lovely chicken stock, enriched with a dash of cream and dijon mustard. It's not the prettiest pie, but it's rustic 😅

Homemade / home assembled Pork Chop, Vadouvan Cauliflower & Purée, Calvados Pan Sauce

I bought a big loin of pork and cut it into five chunky pork chops.

Salted all day and the roasted in a pan.

The cauliflower was simply roasted in florets with some spice and seasoning.

The puree was made steaming the cauli in a pan and then blending. It has a really good pure flavour.

The sauce was made in the pan after I finished the meat. Shallot, sage, a big splash of calvados and some mustard. Chicken stock and butter.

The dish was nice but being meat was probably not the greatest, even with plenty of seasoning the pork wasn’t the most interesting flavour.

Homemade curry paste was garlic, dried chillies, onion, spring onion, clove, cinnamon, fennel seed, dried fenugreek, turmeric, honey, fish sauce, salt, MSG, black pepper corns, garam masala powder, mustard seeds (I think that's about all) blended with a bit of water and fried off the rawness, then added coconut milk and a bit of dark and light soy, fish sauce.

Not a native to the UK, but a big fan of the cuisine. Decided to take a crack at a pie. Never had a proper one to compare it to, but it sure was tasty! I used a pre-made frozen pastry crust but will try making it from scratch next time. Cheers!

This was from “Hole in t’ Wall” in Bowness in the Lake District, and my eyes popped out of my head when they brought it out!!! Good thing I’d already convinced my partner to share or I’d be in a cheese induced coma instead of writing this post

Homemade / home assembled £7 dinner for two, Charlie Bingham's curry and a Tesco naan, bit pretentious but actually banging.

Semi annoying that I probably couldn't make a better curry, pretty mild, and not enough chicken, but actually delicious.

It was reduced to £5, I think they're circa 10 retail, but probably still worth.

Edit

It's pretentious because they come in wooden boxes, with very strict instructions, a tiny foil blanket for the rice, they're unfreezeable and the brand is a bit wanky, before someone else asks.

And also, apparently it's Bigham, big ham. I've misread that for a few years. Bigham doesn't sound like a word. TIL.

Tonight's feast is a homemade cottage pie and sprouts following with a plum crumble and custard. Simply minced beef, onion, cornflour, peas, steak seasoning and oxo stock pot. Plum crumble is made from plums, flour, sugar, butter and sprinkled with a dash of cinnamon. Custard will be from Birds Eye.

Question Sweet Potatoes

What do you with your sweet potatoes? I got a bunch in an OddBox last week and made a sweet potato and lentil curry. I cut them all up into the same sort of size and some of them are lovely and soft and some are still raw in the middle. I’ve tried making fries with them before but they always come out soggy and mash always tends to come out lumpy! Help me UK_Food! Where am I going wrong and what can do to make them taste good?

Question LET'S TALK ABOUT TINNED TOMATOES

So I see brands like Mutti and other premium brands of tinned toms are taking over peoples minds and bank balances... £1.60 for 1 can of tinned toms in Tesco.

Are they really worth the hype and more over - the price?

Do you think you could honesty tell the difference between some standard middle of the road supermarket plum toms in a meal than some Mutti ones in the meal?

Supermarket own brand tinned toms are also produced in Italy btw.

Is it just that the sauce is abit richer and thicker?

Try this:

Get two bowls

In bowl one - Add 1 tin of Mutti plum Toms

In bowl two - Add 1 tin of Tesco plum Toms + 1 tablespoon of tomato puree and mix it through.

I really think people are buying into the whole premium tomato takeover a little too easily.

And yes I know some people do eat them with a breakfast or on their own but the majority of the tinned toms that people buy get added to a bolognese, chilli etc etc.

59p for a tube of tomato puree btw.

I know Smart Price toms are clearly not up to par. But is the different between standard supermarket 60p a can toms than £1.60 a can Mutti etc?

I bet you could make 5 different dishes with Mutti, and 5 different dishes with Tesco own brand. And blind taste tested them. No one would be able to tell you which was which with certainty.
